Fresh Orange Vinaigrette

Fresh Orange Vinaigrette and Red Pepper Salad

It’s amazing how with just a few ingredients you can make a fantastic salad. Usually I load salads up “Jedd Style,” with tons of vegetables and some quickly sauteed seeds. But looking around the kitchen for a quick lunch today, I spotted an orange and a red pepper in the hanging basket. And I had a few strands of onion sliced in the fridge that were begging to be used.

So, in less than 3 minutes I had a beautiful salad to munch on while I read an Entertainment Weekly review and listened to the melodious sounds of “dunk dunk” from the Law and Order opening on television.
Red Pepper Salad
Fresh Orange Vinaigrette and Red Pepper Salad
Fresh Oranges
Makes ½ cup of vinaigrette.

Ingredients:
1 small orange
2 tablespoons of olive oil
1 tablespoon of rice vinegar
2 teaspoons of dijon mustard
Kosher salt
Black pepper
Spring mix or red leaf lettuce
Red pepper
Red onion

Instructions:
Slice the orange in half and squeeze all of the juice from both halves.
Juiced Oranges
Mix together with the olive oil, vinegar, mustard, salt and pepper. Slice the pepper and onion and combine with lettuce. Dress the salad with the vinaigrette.
