Wine stewed pork loin in a crock pot PDF Print E-mail

I don't use our crock pot very often because of our lack of counter space. But when I do, this is my favorite rustic French stew recipe.

 

 

Wine Stewed Pork Loin

3 large carrots

3 medium red potatoes

3 large parsnips

1 medium pork loin

2 large onions

1 large sprig of fresh thyme

1/4 cup of dijon mustard

2 cups of white wine

1 cup of chicken broth

Salt and pepper

Olive oil

Sear the pork on all four sides in olive oil, taking care to salt and pepper each side. While the pork is searing, cut the carrots, potatoes and parsnips into approximately one inch pieces. Place the vegetables in the bottom of the crock pot.

Once the pork is fully seared, place it on top of the vegetables.

Chop the onion and saute it in the same pan that the pork was cooked in.

Once the onion is brown, deglaze the pan with the wine and chicken stock. Spread the dijon and the pork, then pour the pan sauce over everything. Add the fresh thyme, cover and cook on high for 5 hours.

The stew is really good with peasant style bread. And a glass of wine. (Of course.)
