A woman can't live on cat-adorableness and holiday cheer alone. Sometimes cheddar-covered green olives are also necessary. These warm, salty balls of cheese decadence are more than just a great snack for Christmas-tree gazing and kitten admiration, they're also a great appetizer to pull out for holiday gatherings.
And, yes, I think I might have just channeled Alec Baldwin from one of his stints on Saturday Night Live.
The Christmas cards are mailed out, and I'm taking a break to just hang out and look at the tree. Or to be more specific, I"m going to hang out and watch our cat Cooper, sleep under the tree. Because our apartment is so small we normally just put out a small fake one, but this year we got an actual evergreen. And it's the first time our little black cat has seen a Christmas tree. Watching him pace around it, then curl up for a nap under its branches - well, it's not an exaggeration to say that he's besotted.
However, I'm craving something more than Christmas visuals and cat love. So, before I enjoy the twinkling lights and listen to the little cat purr, I'm going to make another batch of these incredible green olives covered in cheddar cheese. They taste just like a cheddar cracker wrapped around salty goodness - which is exactly what they are.
Cheddar Covered Olives
2 cups of shredded cheddar cheese
1 cup of flour
¼ cup of butter, softened
2 tablespoons of water
1 jar of green olives
1/2 teaspoon cayenne
Preheat oven to 375.
Drain the olives and pat dry. Mix together the cheese, butter, water, cayenne and flour. (This will be a fairly dry dough.) Pat out a small amount of the dough into a round and cover the olive with it. Bake the olives until golden brown, about 15 minutes.
Makes approximately 30.
