Crisp endive stuffed with homemade dill cream cheese is one of the most popular appetizers that I serve on New Year's Eve. And they are the simplest thing on the menu too. So, if you're expecting a crowd -  trust me - you can't go wrong with these elegant little bites.

Endive and Dill Cream Cheese

2 heads of endive, washed and separated

1 cup of whipped cream cheese (I used Philadelphia)

2 ½ tablespoons of fresh dill, chopped

1 tablespoon of chives, chopped

½ teaspoon of salt

Dry the endive well on paper towels. Mix together the cream cheese, salt, dill and chives. Spoon into the endive. Garnish with dill.

Makes approximately 20 appetizers.

Yum! I love endive & I think it is better than crackers sometimes for spreads (like his one).
