| Spicy and Lemony Goodness: Turmeric-Yogurt Chicken with Grilled Lemons |

Last week a woman who's in a food group I belong to made this, and I couldn't wait to try it. It was amazing. The chicken was flavorful with just the right amount of spice and serving it with the yogurt sauce meant that we received a double-duty of flavor. And even though I left it on the grill too long, the chicken was still moist. I changed her recipe a little bit, because I had Thai peppers on hand along with scallions and some cilantro. I served it with turmeric rice and a nice big glass of wine. I'm posting my version with a link to hers so you can swoon over her beautiful photos and see the original recipe. Happy Sunday!
Turmeric-Yogurt Chicken (Based on a recipe from The Little Ferraro Kitchen) 3 Thai chilies 1 cup of Greek yogurt Juice of 1 lemon ½ cup of scallions (white and green parts) 1/3rd of a cup of parsley 1/3rd of a cup of cilantro Salt and pepper 1 ½ teaspoons of cumin 1 ½ teaspoons of turmeric 1 ½ teaspoons of paprika
3 chicken breasts
2 lemons, halved Olive oil
Blend together the yogurt, juice of one lemon, scallions, parsley, cilantro, cumin, turmeric, paprika and salt and pepper in a blender or food processor. Reserve 1/3rd of a cup of the sauce. Place the chicken breasts in a glass pan and pour the remaining sauce over them. Refrigerate for a half an hour.
Rub the lemon halves with olive oil and grill for about 5 minutes until just softened. Grill the chicken on each side for about 10 minutes, or until it registers 165 degrees with a meat thermometer.
Turmeric Rice 1 tablespoon of butter 1 cup of jasmine rice 1 cup of chicken salted chicken broth 2 teaspoons of turmeric
Melt the butter in a small sauce pan over medium low heat. Add the rice and stir for one minute. Add the chicken broth and turmeric and bring to a gentle boil. Cover the pan tightly with a lid and turn the heat to low. Cook for 20 minutes without removing the lid. Turn the heat off and let the rice steam for another 20 minutes.
Serve the chicken with the sauce, rice and grilled lemon.
