Basil Blueberry Highball

If you’re still lucky enough to have some of the season’s last blueberries in your possession, this luscious little cocktail is the perfect way to celebrate summer and the impending change of seasons.

I saw these local blueberries at the grocery store on my way home and, even though I didn’t know what I wanted to do with them, I just couldn’t resist. Back at home unloading the bags I glanced over at the cluster of CSA basil rising from a jar of water on the kitchen table, and it occurred to me just what my evening cocktail would be.

Muddle blueberries with basil, seltzer, ginger ale and bourbon? And then sit back and take in an evening sky as summer meanders into fall? Indeed.

Ingredients:

6-8 blueberries

3-4 medium basil leaves, roughly torn

Splash of seltzer water, or blueberry lemon seltzer water

3-4 ice cubes

1.5 oz. bourbon

1.5 oz. ginger ale or ginger beer

.75 oz seltzer water, either plain or blueberry lemon

Instructions

Add blueberries, basil leaves and seltzer water to your favorite cocktail glass. Muddle gently to burst the blueberries and release the oil in the basil leaves.

Add ice cubes, bourbon, ginger ale, and seltzer water. Stir vigorously until the sides of the glass begin to sweat a little.

Grab a coaster, settle in, and enjoy.
