Insanely Delicious Green Bean Toast

Jedd and I call this “Improbable Bread.” As in, there’s absolutely no reason why this should be as insanely good as it is. The ingredients are basic. We’ve tried it with both hearty artisanal breads and bland store bought baguette.

And every single time it blows our collective minds.

Give these a shot, I’m fairly certain they’re going to knock your socks off. They’re super herby, savory, and cheesy, with a little crunch from the beans.

Oh, yeah.

Insanely Delicious Green Bean Toast

Serves 2.

Ingredients:

6 fresh green beans, purple beans or yellow beans, cut into 1-inch pieces

2 tablespoons unsalted butter, melted

2 teaspoons dried parsley

2 teaspoons dried oregano

1 teaspoon dried chives

1 teaspoon dried basil

½ teaspoon kosher salt

½ teaspoon lemon pepper

¼ cup halved cherry tomatoes, drained on paper towels

4 slices hearty bread

Shredded parmesan cheese or mozzarella, to taste

Instructions:

Preheat oven to 375 degrees.

Bring a small pot of water to a boil, and add the green beans.

Cook for 1 minute, or until bright green.

Drain the water, and place the green beans in ice water.

Once cooled, drain beans on paper towels.

In a small bowl, combine the butter, parsley, oregano, chives, basil, salt, and lemon pepper.

Brush the herb butter on the bread slices.

Divide beans and tomatoes between bread, and top with cheese.

Place bread on a baking sheet.

Bake for 8-10 minutes, or until golden brown.

Serve immediately and swoon.
