Ingredients

  • 1 cup long grain red rice rinsed well
  • 1 1/2 cups chicken broth vegetable broth, or vegetarian chicken broth
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon onion powder
  • 1 tablespoon olive oil or butter

Instructions

  • Rinse the rice. Place the red rice in a fine-mesh strainer and rinse under cool running water until the water runs mostly clear. This removes excess surface starch and helps keep the grains separate.
  • Add everything to the pot. Combine the rinsed rice, broth, spices, and butter in the Instant Pot insert.
  • Pressure cook. Lock the lid, set the valve to sealing, and cook on High Pressure for 22 minutes.
  • Let it rest. Allow a 10 minute natural release, then carefully release any remaining pressure.
  • Fluff and serve. Open the lid, fluff the rice gently with a fork, and let it sit uncovered for 2 to 3 minutes before serving.
