Ingredients

  • 1 sheet frozen puff pastry thawed
  • 6 oz. cream cheese room temperature
  • 3/4 cup shredded sharp cheddar cheese
  • 1/3 cup crumbled blue cheese
  • ¼ cup finely chopped red onion
  • 1 ½ tablespoons finely chopped pistachios
  • 2 teaspoons fresh thyme
  • ½ teaspoon freshly ground black pepper
  • 1 egg for egg wash
  • 1 tablespoon water

Instructions

  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the puff pastry to smooth seams.
  • In a medium bowl combine the cheeses, onions, pistachios, thyme, and black pepper. Using an offset spatula, spread mixture across the puff pastry, keeping a ½-inch border.
  • Carefully roll the pastry into a tight log, starting from the long edge. Slice into 1-inch pieces.
  • Arrange roll ups, cut side down, on the baking sheet. Mix together the egg and water in a small bowl. Brush tops for a glossy finish.
  • Bake for 12-15 minutes or until golden brown and puffed. Let cool slightly before serving.

Notes

  • For extra crunch, sprinkle sesame seeds on top before baking.
  • Experiment with different cheese combinations like smoked gouda or goat cheese. Because those would be insanely delicious too.
