Ingredients
1sheet frozen puff pastrythawed
6oz.cream cheeseroom temperature
3/4cupshredded sharp cheddar cheese
1/3cupcrumbled blue cheese
¼cupfinely chopped red onion
1 ½tablespoonsfinely chopped pistachios
2teaspoonsfresh thyme
½teaspoonfreshly ground black pepper
1eggfor egg wash
1tablespoonwater
Instructions
Preheat your oven to 400°F and line a baking sheet with parchment paper.
On a lightly floured surface, roll out the puff pastry to smooth seams.
In a medium bowl combine the cheeses, onions, pistachios, thyme, and black pepper. Using an offset spatula, spread mixture across the puff pastry, keeping a ½-inch border.
Carefully roll the pastry into a tight log, starting from the long edge. Slice into 1-inch pieces.
Arrange roll ups, cut side down, on the baking sheet. Mix together the egg and water in a small bowl. Brush tops for a glossy finish.
Bake for 12-15 minutes or until golden brown and puffed. Let cool slightly before serving.
Notes
For extra crunch, sprinkle sesame seeds on top before baking.
Experiment with different cheese combinations like smoked gouda or goat cheese. Because those would be insanely delicious too.
