Do you love blue cheese? If so, let’s eat!
Food can transcend borders and descriptions. The same dish can be “healthy and decadent.” Or, “rustic and elegant.” Or even, “startling and comforting.” (Although, I’m not sure what that would entail, but it gives me a goal!)
But, food that goes with a good glass of wine or a cocktail is its own thing.
Cocktail food is salty and savory. And it’s even better when it’s little nibbles of deliciousness wrapped in puff pastry.
And that’s what these bad boys are.
These cheddar and blue cheese puff pastry roll-ups are savory bites that combine the rich, tangy flavors of blue cheese with the sharp creaminess of cheddar, all wrapped in buttery, flaky puff pastry. They’re the perfect addition to a party spread or a cozy night in with a glass of wine.
And I do LOVE a night in with a glass of red wine!
They also have a tinge of nostalgia because they’re inspired by the classic Christmas party ball that my grandmother used to make. And I really suspect that she would have loved a bite of cheeseball wrapped in puff pastry with thyme and pistachios baked off to golden perfection.
Why You’ll Love These Roll Ups
- Quick and Easy: With store-bought puff pastry, you can have these on the table in under 30 minutes. (Useful tip: If you forgot to thaw your puff pastry, just put it in a big resealable plastic bag, seal it very well, and put it in a rimmed sheet pan with cold water. It will thaw out in about 10-15 minutes.)
- Flavor-Packed: The combination of cheddar and blue cheese offers both depth and a delightful tang and the onion and pistachios provide a little extra crunch.
- Versatile: Serve them as appetizers with wine, beer, or your favorite whisky buck.
Final Thoughts: These roll ups are best enjoyed fresh from the oven, but if you want to make them ahead of time and refresh them in the oven, no one will really be the wiser.
So, whether you’re hosting friends or just indulging yourself while watching a movie, these cheddar and blue cheese puff pastry roll ups deliver irresistible flavor in every bite.

Cheddar and Blue Cheese Puff Pastry Roll Ups
Ingredients
- 1 sheet frozen puff pastry thawed
- 6 oz. cream cheese room temperature
- 3/4 cup shredded sharp cheddar cheese
- 1/3 cup crumbled blue cheese
- ¼ cup finely chopped red onion
- 1 ½ tablespoons finely chopped pistachios
- 2 teaspoons fresh thyme
- ½ teaspoon freshly ground black pepper
- 1 egg for egg wash
- 1 tablespoon water
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry to smooth seams.
- In a medium bowl combine the cheeses, onions, pistachios, thyme, and black pepper. Using an offset spatula, spread mixture across the puff pastry, keeping a ½-inch border.
- Carefully roll the pastry into a tight log, starting from the long edge. Slice into 1-inch pieces.
- Arrange roll ups, cut side down, on the baking sheet. Mix together the egg and water in a small bowl. Brush tops for a glossy finish.
- Bake for 12-15 minutes or until golden brown and puffed. Let cool slightly before serving.
Notes
- For extra crunch, sprinkle sesame seeds on top before baking.
- Experiment with different cheese combinations like smoked gouda or goat cheese. Because those would be insanely delicious too.
