Everyone knows that kale is remarkably good for you. But, here’s a lesser known fact, kale chips are incredibly addictive.
You know that old ad campaign for a certain potato chip company that says, “You can’t just eat one.”
That applies to these too.
They’re salty, spicy and full of flavor. And impossible to put down.

Southwestern Kale Chips
Serves 2-4.
Ingredients:
1 bunch kale, stems removed and roughly chopped
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon onion powder
½ teaspoon cumin
½ teaspoon chili powder
½ teaspoon hot smoked paprika
½ teaspoon dried oregano
½ teaspoon dried thyme
1 lime wedge
Instructions:
Preheat oven to 250 degrees.
Using your hands, toss the kale with the olive oil in a large bowl.
Spread the kale out in a single layer on parchment or a silicone baking mat in a rimmed cookie sheet.
Bake for 10 minutes. Turn the sheet around, and bake for another 3 minutes.
Mix the spices together in a small bowl, and scatter the mixture over the kale chips. Drizzle with lime juice.
Serve immediately or at room temperature.
