Being a Vermonter, means not quite knowing how to cope with 95-degree temperatures, and 95% humidity. Well, sure. I’m sure a lot of people feel that way who aren’t in Vermont, and I’m sure lots of Vermonters love an extraordinarily hot day.
So, to rephrase. I guess I should say, who has two thumbs and literally can’t deal with the heat and humidity?
This woman.
But, enough whining about things I can’t control.
Let’s talk about solutions to heat and humidity and sweat running down my brow while I’m writing this sentence.
While sitting down.
In front of a fan.
The cure for sweltering heat is:
Watermelon.
Cucumbers.
Lime.
When you combine those three ingredients into a blender or food processor, well, let’s just say on a hot day it’s pure bliss.
There’s something completely refreshing about sweet watermelon, fresh cucumbers, and lime that makes the sweat evaporate off of your forehead. Sweat, begone!
Also, it gets delightfully aerated, which certainly made me feel like chugging, chugging, glugging, glugging it.
So, if you’re sitting around feeling trapped by the heat of summer, and you forgot to buy a swimsuit (again!) for summer water fun, grab some watermelon, cucumber, and lime juice.
You’ll smile, and smile, and smile.
Watermelon Cucumber Lime Juice
Serves 2.
Ingredients:
2 cups seedless watermelon, peeled and cubed
1 cup English or mini cucumbers, roughly chopped
1 ½ tablespoons lime juice
Mint for garnish*
Instructions:
Place all of the ingredients in a blender or food processor. Process until smooth.
Pour over a large glass filled with ice.
Serve immediately.
*Note, I think mint would be a delight in this. However, it was pouring rain when I photographed the drink, and I didn’t feel like being soggy, wet, and damp by going and grabbing some from the garden. Plus, I was feeling a little accident prone because I’d banged my foot while walking into the bathroom to brush my teeth, and I had visions of slipping on the wet grass, and landing flat on my back in the yard. Some days are just like that. However, if you can grab mint safely, go for it!
